Smoked Salmon and Cream Cheese English Muffin
an ode to the classic
This smoked salmon and cream cheese English muffin is inspired by the classic bagel and lox. Sometimes you just cant get your hands on a perfect New York style bagel and create the beloved classic, however this take on that classic will have you just as satisfied! This smoked salmon and cream cheese English muffin comes together in less than 10 minutes and can be served as a quick week day morning breakfast. You can prep the items ahead of time and just assemble on those busy week day mornings in a flash.
I am obsessed with bagel and lox, however my husband is not so fond of capers and red onions that early in the morning. I adapted the classic recipe to more suit his palate and this is now on steady repeat in our house. All you need is your favorite English muffins, cream cheese (I much prefer veggie cream cheese, but plain will do), thinly sliced cucumber to add in that extra veg flavor, a squirt of lemon, chopped chives and of course the main ingredient the smoked salmon. For this I used a wild caught hot smoked sockeye salmon, but again choose which smoked salmon you like. There are so many varieties out there, I’ve seen regular smoked salmon, pastrami style smoked salmon, lemon and black pepper smoked salmon, the list goes on and on.

The assembly comes together in a flash. You toast up your English muffin. Shmear some of the cream cheese on top. Add your sliced cucumber. Top with sliced smoked salmon. Give a nice squirt of lemon to top it off and sprinkle on some chopped chives. Voila, meal complete!

The salmon is high in protein and healthy fats that will help keep you fuller longer and set your day off on the right start. The cucumber is low in calories but high in important vitamins and minerals. Cucumber also helps hydrate you and contains antioxidants. Don’t skip out on the chives, these are easy to find in the grocery store and sprinkled on top are an easy way to get in some nutrients most of us don’t get enough of such as choline. They also are a powerful antioxidant and an anti-inflammatory herb. Serve with a handful of berries and a hard-boiled egg and you have yourself a well balanced and nutritious breakfast.

Ingredients
- 1 English Muffin
- 4 Tbsp Cream Cheese I prefer Veggie Cream Cheese
- 3 oz Smoked Salmon
- 1/2 Perisan Cucumber Or a few slices of english cucumber
- 1 Tbsp Chives
- 1 slice Lemon
Instructions
- Slice and toast the English Muffin.
- Spread the cream cheese on toasted English Muffin.
- Top with sliced cucumber, smoked salmon, chopped chives, and a squirt of lemon.
