Shaved Brussels Sprouts and Bacon Salad

Instructions
Toast almonds in pan over medium heat until desired golden brown color, be careful not to burn! Depending on your pan/oven this should take anywhere from 2-4 minutes. Once done, set aside for later. Dont skip this step, toasting your nuts brings out SO much flavor!
Next add bacon slices to the pan and cook until nice and crispy, flipping over half way through around 5 minutes or so, cook a remaining 5 minutes or until desired level of crispiness, remove from pan and pat grease off with paper towl. Roughly chop bacon into bite sized piecces.
Discard bacon grease (safely) and leave pan shiny but not drenched in the remaining grease (leave about 1 tbsp), key is you want to leave some of that delicious salty bacon flavor to cook the shaved sprouts in.
Add shaved brussels sprouts and garlic and sautee for approximately 5-10 minutes or until soft.
Add champagne vinegar, season with desired amount of salt and pepper.
Toss everything together including brussels, bacons, toasted almonds and serve. Enjoy!
